An oast is a usually conical kiln for drying hops or tobacco.  Often these kilns are housed together in an oast house.

The hops are heated from below and the moisture escapes from the 'bells' at the top. The wind turns the 'vanes' which place the vent holes 'downwind' allowing the damp air to be sucked out.
